Cooking is memory.
Fire is language.
NOURI was born from Chef Amélie Durand's decade-long journey along the Mediterranean coast — from the fishing villages of southern Turkey to the mountain farms of Crete. Every dish on our menu traces a story back to a person, a place, and a season.
We cook exclusively over open flame: wood-fired grill, hearth oven, and ember roasting. Our ingredients arrive daily — whole fish from the morning boats, vegetables from farms within 40 kilometers, herbs foraged from the coastline behind the restaurant.
There is no walk-in freezer at NOURI.
